Many systems are in fragile equilibrium and are easily perturbed by introducing a solid probe, such as a thermometer to measure the temperature, or a pitot tube to measure the velocity. Optical techniques can provide this information by only transmitting and receiving low energy light which do not disturb. In addition by taking images with cameras, not only a single point is measured but a dense two-dimensional array of measurements, or even in 3D!
